Simon Penhaligan
Director of Restaurant Operations
As the Director of Restaurant Operations for RMAL Hospitality, Simon Penhaligan is responsible for 200 employees and AED80 million of revenue relating to the group's restaurants.
Having been involved in the growth of the company from it's inception he has overseen the successful opening of all of the group's restaurants, namely: Trader Vic's Souk Madinat; wagamama the Greens and Al Fattan Towers; Frankie's Italian Bar & Grill; and Trader Vic's Mai Tai Lounge. More successful restaurant openings are taking place soon in Abu Dhabi.
Simon has worked extensively across the foodservice industry, and has been a judge at the prestigious Egyptian Salon Culinaire. Working with groups such as Forte Grand, Swisshotel, and Crowne Plaza, Simon has been awarded several acclaimed industry awards. With more than 20 years' experience, 16 of which have been spent in the Middle East, Simon possesses a wealth of knowledge and an in-depth understanding of the region's Food and Beverage industry.
